I absolutely adore scalloped potatoes, but rarely ever make them because they seem to take forever to bake. Scalloped potatoes are my favorite way to cook potatoes. They are creamy, saucy and so delicious.

I was so excited to find this recipe. Cooking scalloped potatoes in the crockpot makes baking scalloped potatoes so easy. You can choose to serve another meat with these potatoes, but you don’t have to since they are made with diced ham. You could get by with just serving some steamed veggies or a nice salad with these, making dinner super simple.

Super Simple Scalloped Potatoes and Ham

3 pounds potatoes, peeled and sliced thin

1 cup cheese, shredded

1/2 onion, chopped

1 1/2 cups ham, chopped

2 cloves garlic, minced

1 can cream of anything soup

1/2 cup water

Salt and pepper

Toss the potato slices, shredded cheese, chopped onion and garlic into the crockpot and mix until combined. In a separate bowl, whisk cream of anything soup and water together, and then pour it over the potato mixture. Cook for 6 to 8 hours on low. Serve hot with salt and pepper to taste.
